This healthy apple cinnamon recipe is made using oat flour, which makes for a great substitute for wheat flour as it contains a nutritious profile and has an abundance of fibre that aids with digestion. We’ve also swapped out unhealthy refined sugar with our organic antioxidant, healthy powerhouse honey, Cinnamon & Honey.
Ingredients
- 2 cups oat flour
- 1 tsp allspice
- 1 tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup Olive oil
- ½ cup Cinnamon & Honey
- ½ cup unsweetened applesauce
- 1 tsp vanilla
- 2 eggs
- 1 cup mixed shredded and diced apples
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Mix oat flour, sugar, baking powder, baking soda, nutmeg, allspice, and salt in a bowl.
- Mix in a separate bowl egg, oil, apple sauce, vanilla, and honey.
- Combine the two mixtures and fold in grated and diced apples.
- Use muffin paper liners or oil muffin tin and pour in batter, to fill below the rim so they don't flow over.
- Bake for 25-30 minutes or until the toothpick comes out clean.
- Let cool, and drizzle with cinnamon & honey for a little added sweetness!
