Honey Crepes with Orange Ricotta

Crepes are perfect for breakfast, lunch or brunch. Compared to their predecessor, the pancake, they are light, thin and much more versatile, as they can be made sweet or savoury, depending on the filling. With Valentine's day quickly approaching, one of the best ways to say I love you is by making your loved ones something extra special in lieu of the regular breakfast routine. We use oranges in this recipe because the orange compliments the Cacao in the honey harmoniously while staying seasonal. However, you can skip the orange glaze step if you prefer and instead top your crepes with fresh fruit.
Ingredients
Crepes
- 1 cup flour
- 3 large eggs
- 1 1/2 cup milk
- Pinch of salt
Filling
- 3 tablespoons Cacao & Honey
- 1 cup ricotta
- Zest from 1 orange
- Juice from 1 lime
- 1 teaspoon vanilla extract
Orange Glaze
- 4 oranges juiced
- 1 teaspoon vanilla extract
- 1 tablespoon Cacao & Honey
Directions
- The simplest way to create your batter is to add your eggs, flour, salt and milk into a blender and blend until smooth.
- In a large skillet, over medium heat, add butter, moving it around to coat it properly. Pour ¼ cup of batter into the pan, and swirl it around to create a large, thin crepe. Cook until lightly browned on each side, flipping once.
- Next, add freshly squeezed orange juice into a small pot with one teaspoon of vanilla and one tablespoon of honey over medium heat. Slowly simmer and reduce, approximately 10 minutes.
- For the crepe filling, simply combine all the ingredients in a bowl.
- Now, evenly spread your ricotta filling on the crepe. You can choose to roll them tightly or fold them into fourths.
- Once complete, drizzle the orange reduction over filled crepes, serve, and enjoy!
